For this semi-wholewheat Tortiglioni, there is only one wheat if you're serious about traditional, delicious pasta: 100% Italian Durum. We like to get the best out of the wheat, so we grid it - but only lightly so that we keep as much of its original character as we can. Tradition also dictates we use bronze dies to form the Tortiglioni, giving it a slightly rougher surface that the sauce can cling onto.
